Hello dear reader,
This is a lunch I often make for myself when I’m working at home but it is so easy to make, you could even do it in the office – or wherever your lunch breaks happen to take place.
All you’ll need is a flask-full of boiling water, or access to a kettle, and a few ingredients!
Zingy Couscous with Smoked Salmon – recipe
– 50g couscous
– 80ml boiling water
– 2 tbsp salsa
– 2 spring onions, sliced
– ¼ bell pepper, chopped
– 1 tbsp coriander, chopped
– 50g smoked salmon, roughly flaked
Place your couscous in a bowl/mug/pot, pour over the boiling water and cover for 5-10 minutes. Break up with a fork, so it is nice and fluffy. Stir in the salsa, mix in the spring onions, peppers & coriander. Top with salmon. Simples!
Healthy, delicious lunch in 10 minutes!

P.S. I am entering my 10 minute lunch into the Cooking With Herbs bloggers challenge run by Karen over at Lavender and Lovage. To match her gorgeous new blog look, she has a cute new logo for the challenge too!
This is a great idea! Love that it only takes 10 minutes!
Thanks Brandi. Yes, that’s why I love it too – no matter how busy I am, I can usually spare 10 mins to whip this up! x

Wowee – thanks Lorraine! Your concoctions are so clever, that this is really flattering! x
Lovely, I like the idea that you could even do it quickly in the office and … the zingy part, of course.
