Seasonal veg for Scrumptious Saturdays #3

Scrumptious Saturdays is my series of weekly roundups.  I am frequently surfing around the interweb looking at lovely pictures of food and finding delicious new recipes that I want to try out. I thought it might be handy for you if I shared some of my favourites with you each week.

After last week’s sweet fest for Scrumptious Saturdays, I thought we’d best take a look at some healthy seasonal recipes this week!  I find it so easy to eat my vegetables once spring/summer veg hits the farmers markets, as there are so many delicious vegetables to choose from!

Debi from Life Currents has combined several of my favourite seasonal things in her pretty Spring Salad. Asparagus has just come in to season in Scotland and I will certainly be seeking some at the Edinburgh farmer’s market today!

I will also be looking out for artichokes, which are just about to come into season in the UK. I’ve never actually cooked an artichoke before but Shelby from Grumpy’s Honeybunch has made it look easy with this Garlic Roasted Artichoke recipe, which she serves with Garlic Saffron Aioli! Delish!

Cauliflower is in season pretty much all year round in the UK and I often make cauliflower cheese in the colder months. The sweeter summer varieties of cauliflower will be ideal for this intriguing recipe for raw Indian Wild Rice from Joanne of What’s On the List.

  1. I love veg and those photos absolutely made myy mouth water. I can’t pick a favourite, but asparagus is great right now.

    • I’m loving asparagus too just now Heather. It is so perfect and with such a short season. There are another couple of asparagus recipes in Scrumptious Saturdays #4!

  3. What a lovely post! Loving this series – such beautiful photos and recipes. Congratulations on getting your own recipes featured across the big pond too! How exciting! My favourite seasonal veg right now has to be the teeny tiny spring leeks in my veg box. Oh, and hubby bought some Yell strawberries the other day – best strawberries in the world grown right here in Shetland!

    • Aw, thanks so much for your very kind words Elizabeth. I saw some strawberries at the farmer’s market in Edinburgh at the weekend but I’m holding out for Fife strawberries, as they are the best in the world! 😉

  4. Apparently when buying fresh artichokes, you should get the squeakiest ones.
    Therein ends my seasonal vegetable knowlege (bar tasting of course!)

    • Well there you go Emma – learn something new everyday. Apparently the squeak is all due to the freshness of the leaves & means they are still crisp. Good to know, thanks! 🙂

  5. Nice post and series Vohn, I shall look forward to more of these. Well done for getting your recipes featured, though I’m not at all surprised.

    It just has to be asparagus at this time of year, thought I haven’t come across any yet.
