Merry Christmas Dear Reader!
I hope you had a lovely day yesterday. Mr Vohn and I had a wonderful time with his eldest daughter and our grandson, eating too much, playing games and building endless lego sets!
We had a gorgeous free-range local turkey from Gartmorn Farm, a mere 25 miles away, where the poultry are free to roam their acres of grassland which is surrounded by woodland. Sounds idyllic! I simply roasted the turkey, with a quartered onion and apple inside, and covered in thin slices of butter topped with streaky bacon. The turkey was delicious and wonderfully succulent. The thigh meat was the firmest texture poultry meat I have ever seen, presumably due to all that running around they are free to do, and I feared it might be tough but it was melt in the mouth tender and full of delicious flavour.
One of my favourite foodie treats at Christmas is my Ultimate Turkey Sandwich, which I always have for supper late on Christmas Day. It is nice and easy if you have lots of guests too, as you can lay out all the ingredients and invite everyone to make up their own sandwich. Make it a fun event with everyone choosing their own favoured combination.
I go for the same combo every year and it is so good that I often make myself another for breakfast on Boxing Day!
Ultimate Turkey Sandwich – recipe
- 2 slices sandwich loaf
- bread sauce
- cranberry sauce
- light turkey meat
- freshly ground sea salt
- dark turkey meat
- sausage meat stuffing
Take 2 slices of your favourite sandwich loaf. Mine is this Oat and Barley loaf from my local bakery.
Cover one slice liberally with bread sauce and the other with cranberry sauce.
Place a layer of shredded light turkey meat on the bread sauce slice
Add a few twists of freshly ground sea salt and a layer of shredded dark turkey meat
Add some sliced sausage meat stuffing
Pop the other piece of bread on top, cranberry sauce side down. Slice in half and serve.
A perfect end to a wonderful Christmas Day, or a lovely start to a lazy Boxing Day.
Or simply a delicious way to use up some of the never-ending turkey!
