Courgette and Mint Soup

Hello dear reader,

The glut of courgettes is coming to its end and many of the summer herbs are starting to fade. Here is a very quick and very tasty healthy soup to lift those last couple of courgettes with the fresh zing of mint. The recipe comes from The Fife Diet and fits their ethos of local eating perfectly, since the ingredients can all be easily grown in your own garden, or picked up at your local veg shop.

It couldn’t be simpler.  Chop a couple of onions and fry in a little oil until soft. Add two chopped courgettes and a pint of stock, bring to the boil & then simmer for 5 minutes. Blend with a handful of mint leaves (adjust amount of mint to personal taste) and return to pan.

Reheat and season to taste.  Serve with some chopped mint scattered on top.  Easy!

This soup is also delicious served chilled on warmer days and is very nice swirled with a little natural yoghurt or soured cream.
