Zingy couscous with smoked salmon – 10 minute lunch

Hello dear reader,

This is a lunch I often make for myself when I’m working at home but it is so easy to make, you could even do it in the office – or wherever your lunch breaks happen to take place.

All you’ll need is a flask-full of boiling water, or access to a kettle, and a few ingredients!

Couscous with smoked salmon

Zingy Couscous with Smoked Salmon – recipe
 – 50g couscous
 – 80ml boiling water
 – 2 tbsp salsa
 – 2 spring onions, sliced
 – ¼ bell pepper, chopped
 – 1 tbsp coriander, chopped
 – 50g smoked salmon, roughly flaked

Place your couscous in a bowl/mug/pot, pour over the boiling water and cover for 5-10 minutes. Break up with a fork, so it is nice and fluffy.  Stir in the salsa, mix in the spring onions, peppers & coriander.  Top with salmon.  Simples!
