Warm Onion & Olive Salad – 10 minute lunch

Hello dear reader,

Last year I was lucky enough to be sent a selection of herbs from Scotherbs in celebration of becoming their 400th Facebook liker! Included in the box were young Red Chard leaves. Having only ever eaten mature Chard, with its huge crinkly leaves, this was a special treat.

I could have just made a little raw salad but I wanted something a bit different and this is what I came up with…

Warm onion and olive salad

Warm onion & olive salad – recipe
– 1 onion
– 50g young Red Chard leaves
– 1 small lettuce (I used Little Gem)
– handful of green olives
– tbsp sunflower seeds
– tbsp oil

Slice the onion and olives. Shred the chard & lettuce.

Heat the oil in a frying pan and fry the onion until soft and starting to brown.

Fry onions

Add in the Chard, lettuce & olives and toss for about 30 seconds to mix, wilt slightly and heat through. Spoon into a serving bowl.

Sprinkle sunflower seeds on top.

Enjoy your quick, easy, healthy and delicious lunch!

  1. I hate olives lol! But thanks for submitting them to No Croutons Required. I am sure my readers will be more keen on them than I am. The roundup is now live!

    • I never used to like olives either Jac but a Spanish friend got me liking a select few. I find them an acquired taste and there are still some varieties I just can’t get on with!

    • That’s a brilliant idea to have it with wintery vegetables Lorraine – thanks! Spring is with us here now and today we have had our first warm, sunny wind-free day – it has been glorious to feel some heat again! 🙂
