Sweet Pickled Peppers

on April 10, 2013

Sweet pickled peppers are a lovely accompaniment to lots of different dishes,
giving a sweet and sour burst of flavour.
This recipe is my adaptation of a recipe from BonAppetit.com
written by Molly Wizenberg several years ago.
I most often use them in a mixed salad,
or when having a cold platter of different sliced meats or cheeses.
They are very easy to make and will keep in the fridge for several weeks.

Having a jar of these colourful little gems in the fridge, for me, heralds the start of warmer weather and the joy of being able to eat cold platters again, accompanied by thoughts of it soon being warm enough to dine al fresco.  This is probably a bit to much wishful thinking just now as it is still unseasonably cold here in the UK but at least the daytime temperature is slowly heading upwards.

I am entering this recipe into the “Herbs on Saturday” bloggers challenge for April, run by the very lovely Karen over at Lavender and Lovage.

Herbs on Saturday

What is your favourite herb to grow in your garden or windowsill, or to use in your kitchen?

This is looking good and I enjoyed the way you described everything with photos. In case the next two days are not so stressful I might even try it, since I have all the ingredients at home to make this work.

  2. An ABSOLUTELY stunning entry Vohn and such vibrant colours too! THANKS so much for entering Herbs on Saturday! Karen xxx

  3. I think it’s a sign to make these! I was given a big bunch of thyme the other day! 😀

That’s great Lorraine. I could make all sorts of cheesy comments about it being “thyme” to make them, but I’ll restrain myself! 😉 Vohn X

I have bought pickled peppers in a store but you have just inspired me to do my own! Yours look so fresh and deliscious! And it really does not look that complicated… (Which I always thought it was…) fab. Thanks!

Hi Martha, Thank you so much for taking the time to leave your comment. It is wonderful to hear you feel inspired to give the recipe a go. It is really easy – just take care with the boiling vinegar as it can make your eyes sting if the steam gets in them! Vohn x
